What Are Vitamins and Minerals?
Vitamins and minerals are the two major categories of micronutrients — nutrients your body needs in relatively small amounts but cannot do without. They are distinct from macronutrients (carbohydrates, proteins, and fats), which supply energy in bulk. The key structural difference: vitamins are organic — they are carbon-containing compounds produced by living things (plants and animals). Minerals are inorganic — they are chemical elements that originate in soil and water, entering the food supply when plants absorb them or animals eat those plants.
Because the human body either cannot synthesize most vitamins and minerals at all, or cannot produce them in sufficient quantities, they must come primarily from food.
Micronutrient
A nutrient the body needs in small amounts to function — vitamins and minerals are the two main types. Unlike macronutrients, they do not provide energy (calories).
Fat-soluble vitamin
A vitamin that dissolves in fat and is stored in body tissues. Vitamins A, D, E, and K fall into this category and can accumulate if taken in excess.
Water-soluble vitamin
A vitamin that dissolves in water and is not stored in the body to any significant degree. The B vitamins and vitamin C must be replenished regularly through food.
Macromineral
A mineral your body needs in relatively larger amounts, such as calcium, magnesium, potassium, and sodium. 'Larger' is still a small quantity — typically more than 100 milligrams per day.
Trace mineral
A mineral needed in very small amounts — usually just a few milligrams or micrograms per day — but still essential. Iron, zinc, iodine, and selenium are common examples.
Nutrient synergy
The way certain nutrients work more effectively in combination than alone. For example, vitamin C boosts iron absorption, and vitamin D enables calcium uptake.
How Vitamins Work in the Body
There are 13 recognized essential vitamins, and they are divided into two groups based on how the body handles them:
- Fat-soluble vitamins — A, D, E, and K — dissolve in fat and are stored in the liver and fatty tissues. Because they accumulate, excessive intake (particularly through supplements) can reach harmful levels over time.
- Water-soluble vitamins — the eight B vitamins and vitamin C — dissolve in water and are generally not stored in the body in meaningful amounts. Excess is excreted in urine, but they must be replenished regularly through diet.
Vitamins support a remarkable range of functions. Vitamin A is critical for vision and immune defense. The B vitamins are central to energy metabolism — they help convert food into usable fuel. Vitamin C supports tissue repair and immune function. Vitamin D regulates calcium absorption and is involved in bone health. Vitamin K plays an essential role in blood clotting.
Variety Is Your Best Strategy
No single food supplies every vitamin your body needs. Eating a wide range of whole foods — colorful vegetables and fruits, whole grains, legumes, nuts, and quality proteins — is the most practical way to cover all 13 essential vitamins. Cooking methods matter too: some vitamins, like vitamin C, are sensitive to heat, so including raw produce alongside cooked dishes adds nutritional breadth.
How Minerals Work in the Body
The body requires more than 20 minerals, which are broadly grouped by the amounts needed. Macrominerals (such as calcium, magnesium, potassium, and sodium) are required in larger amounts. Minerals serve two broad categories of function:
- Structural roles: Calcium and phosphorus form the rigid matrix of bones and teeth. Without adequate calcium across a lifetime, bone density suffers.
- Regulatory roles: Sodium, potassium, and magnesium help regulate fluid balance, nerve impulses, and muscle contractions. Iron is essential for forming hemoglobin, the protein in red blood cells that carries oxygen throughout the body. Zinc supports immune function and wound healing.

More Is Not Always Better
With both fat-soluble vitamins and certain minerals, exceeding safe intake levels — particularly through high-dose supplements — can cause toxicity. For example, excessive vitamin A can damage the liver, and too much iron can cause serious harm. The Tolerable Upper Intake Levels (ULs) established by the National Academies of Sciences, Engineering, and Medicine mark the maximum daily amounts considered safe for most healthy adults. Why You Need Both — and How to Get Them
Vitamins and minerals rarely work in isolation — they interact constantly. Vitamin D is required for the gut to absorb calcium efficiently. Vitamin C significantly enhances the absorption of non-heme iron (the type found in plant foods). This nutrient synergy is one reason nutrition scientists consistently emphasize whole foods over isolated supplements: food delivers nutrients in combinations and contexts that support absorption.
